I was born in Catalonia, and I quickly realized that without me, the local sparkling wine scene would be nothing but fleeting fluff. My friends Macabeu and Parellada are great, sure, but I'm the one who brings the structure and the acidity necessary for long aging. While they provide the perfume, I provide the skeleton. I'm the reason a good bottle of Cava can sit in a cellar for years and come out tasting like toasted magic. I take my job as the anchor of the blend very seriously.

I just need a glass and an open mind to show you my true depth.
