Gentle waves and salty breezes define my spirit more than flashy fruit ever could. While others scream for attention with tropical outbursts, I prefer the quiet elegance of the shore, acting as a perfect, neutral canvas for time and tide.

Why you'll like me
Why you'll like me
I'm savory
I'm coastal
I'm versatile
You will love me because I'm the ultimate chameleon. I don't force strong fruity flavors onto your palate. Instead, I offer a savory, saline embrace that pairs perfectly with food. Whether I'm fresh and crisp or aged under a blanket of yeast, I bring a unique, sophisticated texture that makes you dream of the Andalusian coast.

Why maybe not
I'm neutral
I'm shy
I'm low-acid
If you are looking for an acid bomb or a fruit salad in a glass, look elsewhere. My acidity is naturally low, which can make me feel a bit flat if I'm not handled with care. Some call me neutral or boring because I lack aromatic fireworks, so don't expect a perfume counter explosion when we meet.

Salty Tang
Almond Notes
Chalky Texture
You won't find a basket of fruit here. Instead, expect a refreshing wash of sea salt and dried herbs. I often carry a distinct nuttiness, reminiscent of almonds or hazelnut skins. There is a chalky texture to my structure, a nod to the white soils where my roots dig deep. I taste like the ocean breeze.

MY LIFE STORIES
A Southern Soul
A Southern Soul
A Southern Soul
I was born in the blindingly white albariza soils of southern Spain, specifically in the Sherry triangle. The sun there is relentless, but the ocean winds keep me sane. For centuries, I have been the undisputed king of Jerez. While Christopher Columbus was busy sailing off to the New World, my ancestors were already being loaded onto ships to quench the thirst of sailors and royalty alike. My history is written in the chalky earth and the salty air of Andalusia, where I learned that true character comes from surviving the heat.

Living Under a Blanket
Living Under a Blanket
Living Under a Blanket
My most famous trick involves a bit of magic called flor. It is a layer of yeast that forms on top of me while I rest in barrels. This living blanket protects me from the air and eats up my remaining sugar, leaving me bone-dry and giving me those signature bready flavors. It is a transformative experience. Without it, I'm just a simple, low-acid white wine. With it, I become Manzanilla or Fino, sharp and complex enough to make your knees weak with my savory intensity.

Outside of my Spanish stronghold, I'm often misunderstood. People in South Africa or the Canary Islands have tried to figure me out, usually planting me for brandy production or simple table wines. I get a bad rap for being neutral, but I see it as being receptive. I don't have a massive ego. I let the soil, the sea, and the cellar dictate my final form. I'm not boring. I'm just waiting for the right artist to paint on my canvas and reveal my hidden depth.

REGIONS I LEAD

Jerez
Forget everything your grandma told you about sweet sippers. Jerez is home to Sherry, a complex universe ranging from bone-dry and salty to thick and syrupy. It is basically alchemy in a glass.

Canary Islands
Forget typical Spanish plains because here you are sipping wine grown in literal black ash and craters while staring at the Atlantic. It is an archipelago where vines behave more like survivors than pampered plants.

Galicia
Tucked away in Spain's lush northwest corner, Galicia feels more Celtic than Mediterranean. Expect razor-sharp whites and surprisingly fresh reds that pair perfectly with an umbrella and a plate of pulpo.

Rueda
While most of central Spain is obsessed with heavy reds, Rueda flipped the script to become a white wine sanctuary. It provides a zesty, herbaceous escape from the heat, delivering crispness that feels like a cold shower on a hot day.

Consider this the fresher, sassier sister to inland Jerez. Sitting right on the estuary where the Guadalquivir River hits the Atlantic, this town specializes in biological aging under thick blankets of yeast.
