REVIEW
Deep gold color. The nose was restrained at first with hints of violet (hello red character!), air then brought out white peach and green apple. It had a very fresh character and the aromas formed a delicious mix. Palate has medium body and a nice medium acidity with aromas of lemon and tonic water - the Sangiovese phenolics can’t be hidden. Aftertaste is mostly neutral with acidity that slowly fades away and a slight hint of wet stone. Very interesting to taste white Sangiovese.

First, the fruit is destemmed and gently pressed, handled with more caution than a risky text message. Following this step, spontaneous fermentation takes place inside stainless steel tanks for exactly twenty days. Finally, the wine ages in stainless steel tanks without any contact with the lees.
