Gentle and subtle, strolling silently through the shadows of Japan's most famous mountain. I prefer whispering over shouting, delivering a delicate, Zen-like experience that pairs flawlessly with raw fish and quiet introspection.

Why you'll like me

Why you'll like me

I'm delicate

I'm refreshing

I'm zen

If you are tired of loud, fruit-bomb wines screaming for attention, you will adore my restraint. I offer a clean, precise elegance that never overpowers your palate. I'm the ultimate companion for sushi and sashimi because I understand the art of supporting flavors rather than dominating them. I bring a sense of calm to the table that few others can match.

Why maybe not

I'm subtle

I'm light

I'm acidic

Fans of big, jammy reds or buttery Chardonnays might find me a bit too shy. I don't punch you in the face with flavor, and some critics used to call me watery before I started hitting the gym with sur lie aging. If you want a heavy alcohol buzz, I'm definitely not your guy since I keep things light and breezy.

When drinking, notice this

Yuzu zest

High acid

Mineral edge

Expect a very pale, almost transparent look in the glass. When you take a sip, you'll immediately notice a bracing acidity that feels like biting into a fresh yuzu. There is often a savory, mineral edge to my profile, and thanks to my slightly thick pink skins, winemakers sometimes let me hang out on the lees to give me a creamy texture.

MY LIFE STORIES

The Long Walk

The Long Walk

The Long Walk

I was born in the Caucasus region ages ago, but I didn't stay put. I traveled the Silk Road, hopping from saddlebag to saddlebag until I finally crossed the sea to Japan over a thousand years ago. I settled in Yamanashi, right near Mount Fuji, where Buddhist monks took me under their wing. It was a long journey to find my spiritual home, but mixing my European DNA with wild Asian vines gave me the resilience to survive the wet Japanese climate.

You might notice I have a lovely pink hue to my skin. That isn't just a fashion statement. It is my armor. Japan gets a lot of rain and humidity, which usually ruins lesser vines with rot and disease. My thick skin protects my delicate berries, allowing me to thrive where others would perish. I might look delicate and elegant in the glass, but out in the vineyard, I'm a tough survivor who knows how to weather a storm.

Finding My Voice

Finding My Voice

Finding My Voice

For a long time, I was treated merely as a table grape or turned into sweet, simple sticky stuff. But recently, I've had a serious glow-up. Winemakers realized that if they let me rest on my lees or gave my skins a bit of contact time, I developed incredible texture and complexity. Now I'm strutting on the world stage, proving that you don't have to be loud to be heard. I'm finally getting the respect I deserve as a serious wine.
