Back in the late 19th century, this area was just a supplier of fruit for sweet wines or generic blends. Enter Domizio Cavazza - the headmaster of the Royal Enological School in Alba. He looked at Nebbiolo growing here and decided it deserved its own name on the label. In 1894, he rallied nine landowners to form the very first cooperative winery in the local castle. He basically told the world that these grapes weren't just leftovers from Barolo but something distinct. Without his vision to bottle and brand it separately, we might still be drinking this stuff out of unlabelled jugs at gas stations.

It stands roughly 30 meters high and was originally part of a larger fortress that sadly didn't survive the various wars and sieges. Today it serves a much better purpose than spotting enemies. You can climb to the top for a panoramic view that explains exactly why Nebbiolo loves these hills. Just make sure you do the climb before a big lunch of tajarin pasta - or those stairs will feel like a punishment.
